Sloppy Joes – My Version
Everybody (almost everybody) loves Sloppy Joes. The wonderful blend of flavors that make a party every time you eat them.

Ingredients
Prepare first
- 1 onion – medium whatever you have
- 1 green bell pepper Bell pepper any color
- 1 green pepper optional: poblano, jalapeno, or similar
The rest
- 1 pound ground beef 80/20 a little more if you like. If you are using a less fat ground beef you will need more suet to provide a cooking fat for the other ingredients.
- 1 tbsp beef suet optional
- 1 16 oz tomato sauce or around that amount
- 1 1/2 tbsp dark chili powder more or less according to taste
- 2 tsp Worchester sauce more or less according to taste
- 1 tsp garlic powder more or less according to taste
- water as needed
- 1 tbsp brown sugar optional – ups the sweetness
- 1 tsp cayenne pepper optional
- 1 tsp hot sauce optional Frank's, Tapatio, Crystal, etc
Instructions
- Chop the onion and peppers.
- Heat a large skillet and add the suet.
- Melt the suet and add the hamburger. Break it up, add the chopped onion and pepper. Cook stirring until the onion is translucent and the hamburger has changed color.
- Add the tomato sauce and stir in well.
- Add the rest of the ingredients and stir in well.
- For more flavor add a little heat, either the cayenne pepper or hot sauce, add and stir in.
- Bring to light boil and then reduce heat to simmer.
- Add water to thin if too thick.
- Cover if keeping warm.
- Serve on buns.

Garlicky Chicken Thighs
This is a nice recipe for those meals you would like something more from your chicken.

Equipment
- 1 bowl large enough for a chicken thigh
- 1 skillet electric or
- 1 large fry pan
- 1 cooks knife used for chopping
- paper towels absorb chicken fats
- heat proof container optional to save cooking oils and chicken fat
Ingredients
Dry Seasoning Mix
- 1/2 tbsp ground onion powder
- 1/2 tbsp ground garlic powder
- 1/2 tbsp paprika
- 1/3 tbsp ground black pepper
- 1/2 tbsp salt non-iodized
Onion and Garlic Prepare Early
- 1/2 onion, medium yellow or red
- 4 cloves garlic I use 6 cloves for more garlic kick
- 8 ounces mushrooms, sliced
Fry Ingredients
- 2 tbsp olive oil
- 2 tbsp butter non-salted
- 6 chicken thighs, bone in and if possible skin on
Cream Sauce
- 1/2 cup cream, heavy
- 1/2 cup vermouth, dry or
- 1/2 cup water or
- 1/2 cup chicken stock
